HANDLING
1. Pan-up 4 x 3 on screen with paper or on a screen.
2. Thaw overnight in cooler for 12-16 hours maximum. Use rack cover.
3. Proof at 105°F and 80-85% humidity for 20-25mins. Rolls should proof to twice frozen size.
4. Allow to dry & score with an “X” on top.
5. Bake at 380°F for approximately 14-16 minutes with 5-8 seconds of steam.
6. Rolls should be golden brown.
7. Allow to cool before packaging.
