HANDLING
1. Thaw dough for 60-75 minutes.
2. Roll out or stretch the dough to approx 8-10 inches.
3. 2 Green scoops of desired filling.
4. Evenly spread filling on each piece, leave a dry 1 in. border.
5. Fold along 10 in. edge in 2 in. increments until 10 in. log is formed.
6. Place seam side down in #90 tin with 4 strip pans to sheet pan.
7. Using scissors make ¾ in. cut in log and shift dough point to side of log. Continue down the length log making cuts and shifting points to alternate sides.
8. Egg wash of substitute.
9. Proof twice frozen size.
10. Bake at 350 degrees for 20-23 minutes.
11. Apply Glaze-n-Shine or honey glaze immediately after oven. Allow to cool and ice as desired.
